Graceburn is seeking an experienced manager to lead the business into its newest phase. The candidate should be well experienced in F&B, have hands on experience in managing a popular dining restaurant, have bar management experience, sound wine knowledge and be able to build and motivate a successful team to service excellence and customer satisfaction.
Working with the Mac Forbes marketing team, develop and implement initiatives to market the venue to a broad audience to increase visitation and revenue. This includes seeking new audiences to frequent the bistro as well as grow bookings of both the venue and private dining room outside of the normal bistro operating hours.
Graceburn has recently appointed Chef Kate Kilsby, who brings over 30 years of experience to the kitchen. Kate's philosophy of providing seasonal and sustainable fare with bold flavours on her weekly changing menu requires a skillful and experienced Front of House Manager to lead the team on the floor to ensure her high-level food offering is received by our customers with an accurate explanation of ingredients and technique and complimented by an appropriate suggested wine pairing.
Graceburn's strong wine culture requires a candidate that has completed or is completing professional wine qualifications to further their knowledge of wines from both the Yarra Valley and from leading regions around the world. You will be also required to gain an intimate knowledge of Mac Forbes' own wines.
Graceburn is open Thursday to Monday with the exception of the summer months where we operate 7 days. Bistro operation and private hire and events means there will be both weekend and night time work.

Mac Forbes is one of Australia's most preeminent and colourful winemakers, largely acknowledged for his world renowned Pinot Noir and Chardonnay produced in the Yarra Valley. 'Graceburn' is in the regional town of Healesville. In 2018 Mac expanded his Graceburn Wine Room to include a Bistro - a full service restaurant featuring an unrivalled array of wines from leading producers from all over the world.
Key Responsibilities of the role include but are not limited to:
- Successful management of the day to day working operations of Graceburn
- Build a profitable business.
- Prepare annual budgets, weekly reports and marketing plans in conjunction with the Mac Forbes finance and marketing personnel.
- Manage and mentor the team members, roster, train, motivate, attract the best people so that Graceburn is known for efficient, knowledgeable, approachable and friendly service.
- Manage FOH and work with the Executive Chef to ensure costings are within budget
- Develop a program of wine & wine ideas and implement to secure additional revenue / growth from different targets, times of day, including events and private dining.
- Researching and sourcing all wine and other beverages for the venue
- Manage the external and internal communications to develop and build the awareness and understanding and motivation of the space and why it's unique.
You should also have:
- Formal qualifications or at least 3 years' experience in hospitality/restaurant management
- Gained or working towards a professional wine qualification such as WSET.
- Great communication skills
