WOODCUT
At the heart and soul of Woodcut is fire, steam, smoke and ice. Beautiful ingredients, simply cooked. Dishes will be prepared in wood and charcoal grills, wood ovens and steam kettles. The earthy and sensory cooking methods impart a tangible element of flavour and authenticity to the cooking process Imagine whole John Dory in a cast iron pan straight from the wood oven, Queensland mud crab cooked in steam kettles or the rich and earthy flavours of duck slow cooked in clay pots.
Woodcut features two beautifully appointed private rooms, a Chef’s Table and numerous unique spaces where guests may hold special events.
We want our guests to feel at home at WOODCUT. Service will be warm and friendly, knowledgeable, professional and intuitive with great attention to detail. There will be a very strong focus on guest recognition and encouraging regular guests. Attention to detail and immaculate grooming will be essential in this environment.
The Sommelier will have knowledge with extensive wine lists and confidence working in a high end/high volume environment. Being a passionate wine professional, you will be inspiring the team to deliver exceptional dining experiences and maximising revenue.
Key Selection Criteria
- Supervise all sections of the restaurant during service periods to ensure that the highest level of wine service is delivered to our guests.
- Interact with all guests to assist and impart knowledge on wine selection that will suit personal preferences and/or accompany meal selections.
- Assist Head Sommelier with other service duties as directed.
- Motivation to drive and increase wine sales and overall restaurant revenue through all avenues possible.
- Assisting the Head Sommelier to achieving target COGs as stipulated by budgets.
- Manage the wine training program for all staff, as required.
