Job Requirements
Position OverviewReporting to the General Manager, this role will be responsible for overseeing all aspects of the winemaking process, from grape harvest, to winemaking, to bottle production. This role will also work closely with management and other departments to ensure that the wines meet high standards for quality, flavour, consistency and most importantly market acceptance.

Key Responsibilities• Uphold the vision and values of the Jesuit winery owners.
• Lead and manage the winemaking team through all phases of production, including harvest, fermentation, aging, blending, and bottling.
• Ensure the quality and styles of Sevenhill wines are at the forefront of Australian winemaking whilst respecting the history of Sevenhill’s winemaking and viticulture.
• Ensure the consistent production of high-quality wines that meet internal and external standards, in particular market acceptance.
• Oversee the development and maintenance of production schedules, budgets, and inventories.
• Manage all aspects of the cellar, including equipment maintenance, hygiene, and safety.
• Maintain relationships with distributors, customers, and media, representing the winery at industry events and tastings.
• Continuously analyse market trends and consumer preferences to develop new wine varieties or improve existing ones.
• Stay abreast of technological advancements in winemaking and implement innovative techniques when appropriate.
• Mentor and train junior winemakers and cellar staff, fostering a culture of learning and excellence.
Qualifications• Proven experience (5+ years) as a winemaker, with a demonstrated track record of producing high-quality wines.
• In-depth knowledge of winemaking processes, including fermentation, aging, and blending techniques.
• Strong leadership and team management skills, with the ability to inspire and guide staff.
• Excellent communication skills, both written and verbal.
• A deep passion for winemaking and a keen eye for detail.
• Experience working with both traditional and modern winemaking equipment and techniques.
• A degree in Oenology, Viticulture, or a related field (preferred).
• A solid understanding of sustainability practices and environmental stewardship in the winemaking process is a plus.
