Assistant Winemaker, Fulltime Continuing
De Salis is a 200 tonne winery located above 1000m on the Northern slopes of Mount Canobolas in the Cold climate region of Orange, NSW. Our focus is on traditional methode sparkling, Chardonnay and Pinot Noir produced from our two vineyards. In addition, we operate a contract winemaking service, including complete sparkling production, still winemaking and a bottling facility.
De Salis is looking for an Assistant Winemaker with passion for handcrafted wine. The successful candidate will be able to demonstrate a strong set of cellar and laboratory skills. You will be passionate about developing your palate, self-motivated and an effective team member. This is a rare opportunity to be a hands-on assistant winemaker and participate in every aspect of producing premium quality wines.
Reporting to this position:
Cellar hands, Vintage staff
Responsibilities, Requirements and Objectives:
- Assist the winemakers in all aspects of production;
- Operate the sparkling production line;
- Operate the still bottling line;
- Perform laboratory analysis;
- Maintain the Quality Assurance within the winery;
- Ensure all winemaking procedures are carried out in order to optimise quality and efficiency;
- Help manage and drive compliance in OH&S, management systems and process improvement;
- Work well in a team environment or independently;
- Be self-motivated, have well organised time management and record keeping skills;
- Be willing to work flexible hours during vintage;
Qualifications/Skills/Experiences
Essential
- A tertiary degree in Oenology or equivalent (or currently enrolled in and close to completion);
- The ability to articulate your palate;
- Demonstrated winemaking experience;
- Demonstrated laboratory experience;
- Show knowledge and understanding of OH&S policies and procedures;
- Comprehensive understanding of quality control standards, compliance and legislative requirements;
- Demonstrated understanding of winery record keeping and inventory control;
- Current drivers and forklift licences;
Desirable
- Overseas winemaking experience;
- Experience operating a bottling line;
- An RSA;
- Sparkling wine production experience;
