Flying Fish Cove is a progressive company based in the Wilyabrup sub region of the Margaret River wine region. We are seeking the services of an Assistant Winemaker. Reporting directly to the Chief Winemaker. This role would suit an enthusiastic wine industry professional that is looking to contribute to the ongoing success of the Flying Fish Cove contract winemaking business.

Job Requirements:

• Tertiary qualification in Oenology with at least 3 years on the job experience.
• Will have worked in a similar role and have both vintage and non-vintage experience.
• Ability to work closely with the Chief winemaker to ensure all cellar operations are completed within company guidelines.
• Excellent knowledge of cellar skills and the ability to supervise and participate in the day-to-day cellar operations.
• Oversee the laboratory operation and ensure calibration and service records are maintained. A sound understanding of wine chemistry and analysis technique is essential.
• Ability to ensure all wines made on-site are within specification and ready to bottle according to the winery bottling schedule.
• Work closely and establish positive relationships with all key stakeholders including staff and contract customers.
• Adopt flexible working hours including normal vintage hours.
• Train and supervise vintage casuals.
• A current Forklift license is essential.
• Adopt the company safety policy and engage in its ongoing management and implementation.
