Reporting to the Executive Chef, The Kitchen Environmental Manager plays a key role in our food & beverage team here at Optus Stadium and manages the day-to-day operations of the stewarding team including the effective cleaning and setup of production and service equipment for all corporate and external catering locations.  This role will be offered on a Permanent Full-Time basis. 

 

Your focus will be:

  •  Manage activities with a focus on full integration with other departments to ensure an effective, whole of business​approach aligned to Optus Stadium's organisational goals.
  • Manage the planning and operational delivery of the Kitchen and Environmental function across the various catering activities including Members, Corporate Dining, Satellite and Meetings & Special Events including any external catering.
  • Maintain and develop the stewarding casual team including recruitment, rostering, training and performance management. 
  • Manage the planning and execution of on-site and off-site cleaning activities.   
  • Ensure that kitchens, storerooms, refrigerators and freezers are inspected daily to ensure cleanliness.
  • Manage the control of inventory and associated costs within the responsibilities.
  • Order stock requirements including disposables and chemicals etc. according to Kitchen requirements. 
  • Ensure cleaning schedules are completed to the required standard across all Kitchen operations.
  • Ensure the kitchen complies with ISO 22000 and HACCP standards

​To be successful, you will have:

  • 5 Years’ experience in 5 star hotel and/or large banquet and event areas.
  • HACCP accreditation.
  • Forklift License (desirable)
  • Hygiene for Food Handlers Accreditation
  • Strong literacy and computer literacy skills
  • Previous experience in the management of departmental labor costs and purchasing budget
  • Experience working with large groups of staff from various cultural backgrounds
  • Able to work evenings and weekends when events are running

While standard hours are 8.30am to 5.00pm, the nature of the event industry means that you will be required to work outside these hours particularly around events being staged at Optus Stadium and Stadium Park.
