SEEKING Experienced Sommeliers – for our multi-level and multi-outlet venues, a’Mare, Crown Sydney & Cibaria Manly on Manly Beachfront.
a'Mare is a Two-Hatted luxurious venue led by Step into one of Australia’s most celebrated Italian restaurants, where timeless traditions meet refined hospitality. At a’Mare, we showcase the best of Italian cuisine , seasonal produce, handcrafted pasta, woodfired flavours, and tableside service. Located in one of Sydney's most prestigious locations, a’Mare boasts an award-winning wine list, having won the Best New Wine List at the 2021 Best Wine List of the Year Awards, Australia.
Cibaria Manly is a One-Hatted, multi-level, 350-seat Italian restaurant that brings together the best of Italian cuisine across its diverse culinary stations that include; antipasteria, salumeria, spaghetteria, bisteccheria, forneria, cruderia, friggitoria, and gelateria. From handcrafted pastas and woodfired pizzettas, to curated cocktails and house-made gelato, we offer a true Italian experience from morning through to late evening. Our menu celebrates the diverse flavours of Italy, paired with an exceptional wine list featuring a heavy lean on Italian varietals, alongside standout selections from France, New Zealand, and Australia.Cibaria was also awarded 3 goblets in the Australian Wine list awards for 2025.
Our venue includes à la carte dining, private event spaces, and our beachfront Caffetteria open daily from 7am. We also serve bespoke drinks through Cocktaileria, located within 55North Bar by Cibaria, in partnership with the Manly Pacific Hotel (M Gallery).
We are seeking several Experienced Sommeliers who thrive in a high-performance environment, value precision and authenticity, and are driven to deliver excellence every service. bring genuine hospitality, expert wine knowledge, and a passion for Italian cuisine to our world-class venues.

What You’ll Be Doing
- Providing expert food and wine pairing recommendations
- Delivering exceptional drinks service, supporting section waiters
- Assisting with glassware clearing and replacement
Requirements
What We Look For
- A great personality and a can-do attitude
- Prior experience in world-class venues
- A passion for Italian wine and food
Essential Requirements
- Full Australian working rights
- Current NSW RSA Certificate
- Fluent in English
- Minimum 12-36 months of experience as a Sommelier and/or
- Diploma Hospitality
- Strong food and wine pairing knowledge
- Ability to stay cool under pressure
- Excellent attention to detail and grooming standards
Preferred Extras
- Italian language skills are a bonus
- Immediate start preferred
