The Republic is an iconic, 4-storey, 1300 capacity pub situated on the corner of Bridge and Pitt Street, Sydney CBD.
This property has a rare late licence which we plan to maximise and help ‘Make Sydney Late Again’.
In September 2023, Virtical, a humble property developer purchased the building with plans to ‘reimagine the hospitality’ with a carefully curated senior leadership team of hospitality professionals.
The Republic is host to a busy ground floor sports bar with gaming and on-street seating.
Level 1 has a 60 pax dining room with a similar size event space on level 2.
Level 3 is Taylors, our super busy, 250 capacity rooftop.
We are currently renovating level 2 to become "INNA', a moody, late night cocktail lounge with wine and snack vibes.
The food offering will be smaller dishes which will partly come from our new wood-fire oven on the rooftop on the floor above us.
The beverage program will be structured around a 200-bin wine list, 400-500 bottle back bar and sophisticated cocktails.
The service will be friendly and polished.
Trading hours: Monday to Friday from 4pm -2pm with events on the weekends. The Republic is closed on Sundays. 7.5% gratuity on each bill.
Not long after the launch of the lounge, we will re-launch level 1 as a new concept.
We are currently looking for a full-time, senior bar manager to drive the team performance, culture, sales and reputation.
We will be opening in early February ‘24 and the successful candidate would need to be able to start in-between Jan 2-8.
Required skills:
- ‘Hands on’ management. This a service-based role.
- Managing the business aspects of the bar, such as staying compliant with our liquor license, daily financial reconciliation, receiving inventory, ordering, managing budgets, and setting goals.
- Menu creation and development.
- Strong product knowledge of spirits and classic cocktails is a must.
- Wine knowledge is helpful but not essential.
- Hiring and developing staff to achieve excellence at a guest experience level.
- Creating effective rosters to ensure you meet forecast and budgets.
- Setting and enforcing quality and safety controls.
- Working, serving, and managing diverse personalities.
- Planning and taking part in promotional events.
- Diffusing tense situations between patrons or staff members to prevent possible safety or legal issues, ejecting unruly, disrespectful persons, if needed.
- Maintaining a fun, safe atmosphere for patrons.
- Tech savvy.
- Minimum 3 years in a bar manager role of similar of caliber.
- Options for sponsorship for the right individual.
- Can work late nights.
