We have an exciting opportunity at Spicers Peak Lodge for a Food and Beverage Manager who is ready to take on their next challenge and lead this hatted restaurant in a luxury lodge of Australia. 

You will be an integral part of our team, curating and delivering an unforgettable and personalised experience for our guests from start to finish.

Perched atop a mountain on 8,000 acres in Queensland high country and just 90 minutes drive from Brisbane CBD, Spicers Peak Lodge offers an exclusive, intimate Australian wilderness lodge experience. The Lodge sits 1,100 metres above sea level with views across to the surrounding peaks. From untouched rainforest and rugged mountain escarpments to the pristine backdrop of World Heritage Listed national park and ancient volcanic regions, there is no shortage of unspoiled wilderness to experience and admire. Here's what you'll do; 

  • Curate an unforgettable and personalised experience for our guests from start to finish;
  • Ensure products and services being delivered are consistently of the highest quality and continually improved; 
  • Lead, inspire and develop an exceptional team of hospitality professionals;
  • Nurture the team and provide a fun and energetic environment in which they can thrive alongside you;
  • Coach your restaurant team to uphold service and quality standards; 
  • Continue to enhance the loyal relationships with guests and locals to promote repeated clientele;
  • Maximise and identify opportunities to sell products & experiences that suit the needs of our guests; 
  • Management of financial cost measures including beverage and wage costs. 

This is how you’ll know you’re right for this role...

  • Minimum of 2-3 years of management experience in a fine dining, high end or hatted restaurant environment, ideally from within a Hotel environment; 
  • Strong wine knowledge and desire to grow and maintain a wine list; 
  • Demonstrated financial acumen in relation to running a profitable restaurant; 
  • Sound understanding of back of house operations including stock takes, COG's and rostering; 
  • A genuine love for great food and wine; 
  • WSET level 2 or CMS certification (desirable); 
  • Ability to lead a team to success and develop those coming up in the industry' 
  • A talent for customer service with a vibrant and outgoing nature.
